Melt butter and brown sugar in large pan on low heat. Let simmer for 2–3 minutes. Remove from heat and add cinnamon, salt, almond extract, and vanilla. Then add quick oats and stir well until all the oats are coated. Put on 2 large pans/sheets with edges and toast on 375 for 10–20 minutes. Cool then add raisins and nuts. Store in airtight container.
