Veggie Soup

from Virtuous Daughters, December 2006~Volume 6, Number 9
  • ​1/4 head of cabbage
  • 3 large carrots
  • 2 zucchini
  • 1 whole onion
  • 1 can diced tomatoes (with juice)
  • 1 T. Chopped garlic
  • 2 jalapenos
  • 12­­–15 cubes beef boullion
  • Salt-n-pepper
  • 3 sticks celery
 
Boil 2­­–3 quarts water. Boil chopped carrots 10 minutes, then add all other chopped veggies except cabbage for another 10 minutes. Add cabbage for 1 minute, then turn off. Let cool.
