Sugar-Free Apple Pie

from Virtuous Daughters, December 2011~Volume 11, Number 9

  • 1 homemade pie crust (see below)
  • 4–8 Granny Smith apples, peeled, cored & cut into eighths
  •  2–3 tsp. cinnamon           
  • 1 c. agave
  • 2 tsp. vanilla                       
  • 3 T. flour
 
Mix ingredients together; pour into pie crust. Add top crust and slit. Bake at 375 for 40–50 minutes. Enjoy!
 
Pie Crust Recipe (makes two crusts)
  • 4 c. flour                                               
  • 1 3/4 c. shortening
  • 1 T. sugar (can be omitted)             
  • 2 tsp. salt             
  • 1/2 c. water        
  • 1 egg                     
  • 1 T. vinegar
 
Use fork to mix flour, shortening, sugar, and salt. In separate dish, beat remaining ingredients. Combine the two mixtures, stir in with fork until all ingredients are moistened. With hands, mold the dough into a ball. Chill at least 15 minutes before rolling into desired shape.
