Directions: Rinse the quinoa, then combine with water and salt in a medium saucepan. Bring it to a boil, reduce heat and simmer for 20 minutes. Remove it from heat, and place edamame on top of quinoa and let sit for 5 minutes. Fluff with a fork and then add tomato and cucumber and toss. Add lime and lemon juices, chives, parsley, thyme, soy sauce, and toss. Comments are closed.
