Quinoa Tabbouleh

  • 1 c. quinoa               
  • 2 c. water                
  • Sea salt (to taste)
  • 1/2 c. edamame (frozen)
  • 1 tomato, chopped
  • 1/2 cucumber (unpeeled & chopped)
  • 1 T. fresh lime juice
  • 1 T. fresh lemon juice
  • 1 T. chives, minced
  • 2 T. parsley, minced
  • 1 T. thyme, minced        
  • 1 T. soy sauce
 
Directions: Rinse the quinoa, then combine with water and salt in a medium saucepan. Bring it to a boil, reduce heat and simmer for 20 minutes. Remove it from heat, and place edamame on top of quinoa and let sit for 5 minutes. Fluff with a fork and then add tomato and cucumber and toss. Add lime and lemon juices, chives, parsley, thyme, soy sauce, and toss.
