Paleo Pizza Recipe

  • 1/3 cup warm water
  • 3 Tablespoons olive oil (plus more for brushing)
  • 1 Tablespoon honey
  • 2 ¼ teaspoons yeast
  • 1 egg
  • 1/2 teaspoon salt (plus a pinch for sprinkling)
  • 1 ¾ cup tapioca flour, divided (plus more for dusting)
  • 1 cup almond flour
  • Pizza toppings, as desired
 
In a large bowl, put the first three ingredients and mix well. Sprinkle yeast on top and let it sit for 5 minutes, until foamy. Add egg, salt, and 1 ½ cups of tapioca flour. Whisk until dough is smooth and foamy. Stir in almond flour, then stir the remaining tapioca flour. The dough should be shaggy. Take the dough out of the bowl and dust your hands with the tapioca flour. Press the dough in a ball, kneading to get any floury bits mixed. If the dough is too sticky to come together, add almond flour 1 Tablespoon at a time. Return the dough to the bowl, cover it with plastic wrap, and set the bowl in a warm place for 45 minutes, or, set oven to 200*F for a couple minutes and turn it off and place dough in the oven. The dough will just get bigger. Put a pizza pan upturned in the oven and preheat to 375*F. Put parchment paper, dust your hands with tapioca flour, and put dough on the parchment paper. Form pizza in a circle, and brush the top with olive oil and a pinch of sea salt. Put the dough with the parchment paper on the hot pizza pan in the oven, and bake for 8 minutes. When it is done, prick the middle with a fork, add your toppings, and return to oven for 5 minutes. (OPTIONAL: When it is done baking, for the 2nd time, broil for 2 minutes, or until brown.) ENJOY!!!
