Heat oven to 350. Mix thoroughly flour, butter, and powdered sugar in small bowl. Press evenly with hands in bottom and about 5/8 inch up sides of ungreased* square pan (8x8x2). If dough is sticky, flour hands. Bake for 20 minutes. Beat remaining ingredients in a medium bowl on medium speed until light and fluffy. Pour over hot crust. Bake at 350 until no indentation remains when lightly touched in the center; about 25 minutes. Let stand until cool and then cut into squares, and if you want sprinkle with powdered sugar. Note: if you want to make a bigger pan, just double the recipe and use a 13x9x2 inch pan. *Cleaning tip: These squares have a tendency to stick to the bottom of the pan so what I do is line the pan with foil and lightly spray it with oil. When they are done and cooled, lift the foil out of the pan with the lemon squares. Comments are closed.
