I love to bake and wanted to share one of my favorite recipes. You can make a batch of these and have them for a treat after helping your family clean your house!!
Heat oven to 350. Mix thoroughly flour, butter, and powdered sugar in small bowl. Press evenly with hands in bottom and about 5/8 inch up sides of ungreased* square pan (8x8x2). If dough is sticky, flour hands. Bake for 20 minutes. Beat remaining ingredients in a medium bowl on medium speed until light and fluffy. Pour over hot crust. Bake at 350 until no indentation remains when lightly touched in the center; about 25 minutes. Let stand until cool and then cut into squares, and if you want sprinkle with powdered sugar. Note: if you want to make a bigger pan, just double the recipe and use a 13x9x2 inch pan.
*Cleaning tip: These squares have a tendency to stick to the bottom of the pan so what I do is line the pan with foil and lightly spray it with oil. When they are done and cooled, lift the foil out of the pan with the lemon squares.
