from Virtuous Daughters, May 2011~Volume 11, Number 2

  • 2 c. biscuit or bisquick mix
  • 1/2 c. cold water
  • 1 lb. ground beef, fried
  • 1 green pepper, chopped
  • 2 T. onions, chopped
  • 8 oz. tomato sauce
  • 8 oz. sour cream
  • 1 T. or pkg. taco seasoning
  • 1 c. shredded cheddar cheese
  • 1/3 c. mayonnaise
  • paprika

Combine biscuit mix and water, stirring with a fork, until blended. Press into the bottom of a lightly greased, 8x12x12 inch baking dish. Bake at 375 for 9 minutes. Fry beef, green pepper, and onion in a skillet until meat is brown. Add taco seasoning after draining meat. Stir in tomato sauce. Spoon over the crust. Combine sour cream, mayonnaise, and cheese. Spread over the meat mixture. Sprinkle top evenly with paprika. Bake at 375, uncovered, for 25 minutes or until lightly browned. Delicious—this is one of my favorites!
