It’s very fast and easy, and is handy because it calls for ingredients that we usually have leftover from a previous meal. Depending on your family’s size, you may want to double—or triple—the recipe. For our family of six, we double it.
In a small skillet, sauté celery and onion in butter until crisp—tender. Place in a bowl; add mayonnaise, soup, peas or green beans, and lemon juice. Stir in chicken and rice. Transfer to a greased 9x11 baking dish and sprinkle with crushed chips or crackers. Bake, uncovered, at 350 for 30 minutes or until heated through. Comments are closed.
