Creamy Chicken Hot Dish

Our family loves this recipe! It’s very fast and easy, and is handy because it calls for ingredients that we usually have leftover from a previous meal. Depending on your family’s size, you may want to double—or triple—the recipe. For our family of six, we double it.
 
  • 2 celery ribs, chopped
  • 1 onion, chopped
  • 1 T. butter or oil
  • 1 1/2 c. mayonnaise
  • 1 can condensed cream of chicken soup(we make our own—it’s very easy!)
  • 1 c. frozen peas or green beans, thawed
  • 1 T. lemon juice
  • 3 c. cubed cooked chicken or turkey
  • 2 c. cooked rice
  • 1 c. crushed potato or corn chips (saltine crackers work well, too)

In a small skillet, sauté celery and onion in butter until crisp—tender. Place in a bowl; add mayonnaise, soup, peas or green beans, and lemon juice. Stir in chicken and rice. Transfer to a greased 9x11 baking dish and sprinkle with crushed chips or crackers. Bake, uncovered, at 350 for 30 minutes or until heated through.
