Cranberry Bread

from Virtuous Daughters, March 2008~Volume 7, Number 12

  • 2 c. sifted flour                              
  • 1 c. sugar       
  • 1 ½ tsp. baking powder                
  • 1 tsp. salt
  • ½ tsp. baking soda                       
  • ¼ c. butter
  • 1 egg beater                                  
  • 1 tsp. grated orange peel
  • ¾ c. orange juice                           
  • 1 ½ c. light raisins
  • 1 ½ c. fresh or frozen cranberries, chopped

Sift flour, sugar, baking powder, salt, and baking soda into a large bowl. Cut in butter until crumbly. Add egg, orange peel, and orange juice all at once. Stir just until evenly moist. Fold in raisins and cranberries. Spoon into greased 9x5x3 loaf pan. Bake at 350 for 1 hr, 10 min.
