Cocoa Date Balls

from Virtuous Daughters, July 2015~Volume 15, Number 4

  • 2 c. raw walnuts
  • 2/3 c. unsweetened cocoa powder
  • 1 c. pitted dates (soaked in warm water for 10 min. to soften)

In a food processor, blend walnuts and cocoa powder until nuts are finely ground. Drain dates and squeeze out any excess water. Add dates to food processor. Process until mixture sticks together and forms a ball. If desired, add water, 1 Tbsp. at a time, for moister brownie balls.

Line an 8-inch square dish with parchment paper. Form smaller balls and place in dish. Cover and refrigerate (or freeze if the mixture turns out too runny, or if you want it to be more of a chocolate bar texture) for at least 2 hours to set. Serve and enjoy!
Note: They can be stored in fridge/freezer covered for up to a week!
P.S. Whenever I make these chocolate/peanut butter balls for my family of nine, they are thoroughly enjoyed and disappear super fast. They are also very healthy and highly nutritious!
