Fry bacon or sausage, then chop it up. Peel hard boiled eggs and chop them as well. Mix eggs and meat with remaining ingredients in a bowl. Add more of whatever you think it needs. Preheat oven broiler to low. Spread a good amount of spread on the English muffins (split), setting them on a cookie sheet. Place them on the lower rack of the oven and broil them for 3-4 minutes, being careful to not burn them. The topping should be hot, and cheese melted. Enjoy! (Note: the spread can be made a day ahead of time if desired. Serves 12.) Variations: ~Stir finely diced onion and/or pepper into mixture. ~Use Pepper jack cheese instead of Cheddar for a little spice. ~Toast a bagel half instead of an English muffin. ~Spread on sandwich bread and add lettuce and tomato for a twist on egg salad.
