Banana Pudding

from Virtuous Daughters, August 2001~Volume 1, Number 5
  • 48 golden vanilla wafers
  • 1 pkg. (4-serving size) vanilla pudding and pie filling
  • 2 ½ c. milk
  • 1 T. butter or margarine
  • 2 medium bananas, sliced
  • Whipped Cream or Topping (optional)
 
Line bottom and sides of 8-inch square or 1 ½ quart baking dish with golden vanilla wafers. Combine pudding mix, milk and butter in saucepan. Cook and stir over medium heat until mixture comes to a full boil. Remove from heat. Layer slices of banana over vanilla wafers, and then add a layer of pudding. Repeat layers of vanilla wafers, bananas and pudding. Chill until firm, about 3 hours. Serve with whipped cream or topping and garnish with banana slices. Banana pudding may also be layered in individual dessert glasses or dishes.  Serves 6
