Cut the butter into 3 equal pieces. Put 2 of the butter pieces in a small saucepan and set remaining pieces aside. Place the saucepan over medium heat and stir with wooden spoon until melted. Remove the pan from heat and set aside to cool. In a medium mixing bowl, combine the flour, sugar, baking powder, and salt. Mix until well blended. Put the banana in a small mixing bowl. Mash until almost smooth, then add milk, eggs, and vanilla. Mix until well blended. Add banana mixture and butter into flour mixture and mix until the batter is just a little lumpy. Cook over a buttered griddle on medium heat. Serve with butter and maple syrup. Comments are closed.
