April Fool's Day Supper

  • 1 tub whipped topping
  • Your favorite meatloaf
  • Enough mashed potatoes to feed your family
  • 3 (3-oz.) pkgs. strawberry jello
  • 1 c. sliced strawberries
  • 1 c. blueberries
  • Vanilla ice cream
  • 2 c. flaked coconut
  • 8 waffle ice cream bowls
  • 4 pieces black rope licorice cut into 1/4” slices
  • 1 small jar maraschino cherries patted dry and cut in half

“Layer Cake Meat Loaf”—Bake meat loaf recipe into 2- 9” square cake pans or 1- 9x13 cake pan. After cooling for at least 10 minutes, invert onto a serving platter. Cover with mashed potatoes and spread just as you would frost a cake. Spoon a cup or two of potatoes into a pastry bag with open star tip. Pipe a shell border around the bottom and top sides of the “cake.” Place a little ketchup into a resealable plastic bag and cut a tiny hole in the corner. Do the same with a little mustard. Pipe little alternating dots in the dips of each shell.

“Berry Sodas”—Prepare jello according to package directions. Refrigerate until partially set, about 2 hours. Stir in berries and then pour into 8 clean beverage glasses. Insert a straw into each and refrigerate until set.

“Surprise Taco Salad”—Place finely chopped graham crackers or ice cream cones or vanilla wafers . . . Or anything to use as a coating in a shallow bowl. Drop small scoops of ice cream in the crumbs to coat. Place on a baking sheet and freeze until firm. Now you have your “taco ground beef.” In large resealable bag combine 1 ½ tsp. Water and 6 drops of green food coloring. Now you have your “lettuce.” Do the same with ½ c. shredded coconut and 4 drops yellow food coloring. Now you have the “cheese.” Place coated ice cream balls in waffle bowls (your taco shell). Sprinkle with green coconut (“lettuce”). Dollop with whipped topping (“sour cream”), sprinkle with yellow coconut (“cheese”) and licorice (“black olives”). Top with cherries (“tomatoes”). Yield: 8 servings and a lot of smiles.
